Without Standards any farmer would be able to do what ever they felt like to the animals. whether that would be injecting it with hormones that could harm us humans or feeding it other things to make it grow bigger that would also be unhealthy to humans. Stands require goods to meet basic requirements so that humans can enjoy safe food without worrying about dying to it
