Why can't sociologists empirically study which religion is true or not true?

There is no (and can likely be no) empirical proof of a God/gods. Each religion is subjectively true in the eyes of their believers, and none is necessary "more true" than another - though you may be inclined to disagree if you belong to one such religion.
