The hormone which is released during stressful situations which cause a spike in hunger is CORTISOL.
When cortisol is released, it provides the body with glucose via gluconeogenesis, so that energy will be available for fight or flight process. Cortisol action on the glucose content of the body usually produce a feeling of hunger because the energy used up as to be restored back into the system.
