Gastrin is a peptide hormone produced by the so called G-cells , which are endocrine cells located in the stomach. These cells are stimulated when food enters the stomach. Gastrin is released into the bloodstream (characteristic for hormones) and acts on other cells of the stomach, thereby stimulating the release of gastric acid into the stomach.
