Why is it difficult for you mind to register a word such as " Green, Blue, Red, Purple, ect. " if the word is written in a different color such as " Green is written in Purple ink, Blue is written in Red ink, Red is written in Green ink, and Purple is written in Blue ink "

because your reactions and brain are confused as to which it should react to first, the colour or the written colour.

Because we aren't used to that and because the word blue means the color blue so it should be blue but instead it's red.
