I think Poe is warning us about violence here; the man in the story does not only become more irritable, but he manifests this through violence and cruelty towards both his animals and his wife.
I think that Poe might be trying to warn us about the effects alcohol could have on you and your body. Also how the alcohol slowly changes your state of mind and behavior.
