why do engineers need to keep the mass of a space craft as low as possible?

They don't "need" to do that. It's just a very very very good idea. If your spacecraft has more mass, then you need a bigger booster, more fuel, and more money to launch it.
I have read that at the present time, it's costing nearly $10,000 to put one pound into Earth orbit.
